We’re delighted to have teamed up with Wee Buns Cookery School who’s going to be sharing some of her delicious recipes with us to encourage us all to get baking at home.

First up, is her loaf tin, wheaten bread recipe, perfect for getting the kids to help you make and hopefully stop them from getting bored!

What is Wheaten Bread?

In Northern Ireland brown soda bread is known as wheaten bread and is made with wholemeal flour.

A staple of many Northern Irish homes through the decades, homemade wheaten bread has become a firm favourite in households again.

A healthier option and a good source of energy, this wheaten loaf has been given a modern twist with the addition of pumpkin and sesame seeds for that extra nutritional value.

So, if you’re not able to get out or there’s a shortage of bread in the shops, you can bake this quick and easy bread at home.

Bread-Recipes

Wheaten Bread Ingredients

  • 7 oz plain flour
  • 6 oz wholemeal flour
  • 1 level teaspoon bicarbonate of soda
  • 1 tablespoon wheat germ
  • 1 tablespoon of bran
  • 1 tablespoon soft brown sugar
  • Pinch salt
  • 1 egg
  • 1 tablespoon olive oil
  • ½ – ¾ pint buttermilk
  • Pumpkin and sesame seeds (optional)

Method

  1. Preheat oven to 200C
  2. One loaf tin brushed well with oil
  3. Sieve the plain flour and soda into a large bowl.
  4. Add the wholemeal flour, sugar, salt, wheat germ and bran and mix well together and make a well in the centre.
  5. Beat the egg with half of the milk and the olive oil.
  6. Add the egg mix to the flour and mix well, adding more buttermilk until it is soft and slightly sloppy.
  7. Pour into the tin and sprinkle some seeds on top.
  8. Bake for about 1 hour, for the last 5 minutes it can be turned upside down.
  9. It should be nicely risen and golden and sound hollow when tapped on the base.
  10. Cool on a wire rack.

For best results, serve with some delicious homemade Northern Irish butter – delicious!
